This week we did a cooking demonstration at a lovely gourmet olive oil shop called Baker & Olive in Encinitas.

They invited us to show their customers creative ways to use fresh, seasonal produce. My niece, Aimee Anderson from 30 Days Sugar Free, joined with us and together we demonstrated how to make four of the top recipes from our blog:

I hope you try the salad and fudge recipes, but this post is all about how to make pizza sauce with fresh tomatoes!

How to make pizza sauce with fresh tomatoes: It’s all about the ingredients…

Lots of pizza recipes – even a cauliflower crusted pizza – will just call for “1 jar pizza sauce.” Oh no! We can’t do that when we have fresh tomatoes from Dassi Family Farm!

I wanted to show people how to make pizza sauce with fresh tomatoes. It’s also important to note that you can have the best recipe, and follow it to the letter, but every chef will tell you that having quality ingredients takes a dish from good to great.

Fortunately, sourcing vine-ripened tomatoes that are locally grown with love is what we do here at Daily Harvest. Right now, Dassi Family Farm is growing a very special variety they call ‘Nutrient Powerhouse‘. It’s a smaller tomato with a greenish brown color and has a rich, sweet flavor without a lot of acidity. You can add these delicious tomatoes to your build-a-box or just wait for your farm box to arrive this week, in which case they’ll be in there!

With fresh tomatoes in hand, now it’s time to find the right recipe!

Lots of recipes involve blanching and peeling the tomatoes first or simmering for hours. Too much hassle and time.

I finally found a recipe that called for roasting the veggies. Yes! Roasting speeds up the process, plus it brings out the natural sugars of any veggie. Since I was also trying to find a recipe that allowed me to eliminate using any added sugar, roasting was the way to go.

Making the sauce… 

First I rinsed the tomatoes – though I often don’t even bother with rinsing when I use Dassi tomatoes since I know they don’t use any pesticides or chemicals, and their greenhouse is cleaner than my kitchen!

A quick rinse is all these beautiful fresh tomatoes need.

The next step is to take off the stem leaves and then cut each tomato into quarters. Cut right through the core, instead of removing it, to save every bit of the tomato for roasting.

Next I peeled and quartered one red onion (yes, I put an onion piece on top of my head!) and also peeled 12 garlic cloves to add to the mix. A red bell pepper would be nice too if you have one handy.

Next, I mixed together a paste of sea salt, pepper, dried parsley, oregano, basil and rosemary with olive oil, and tossed it with the veggies until they were well coated.

Then they went into a pre-heated 400 degree oven for roasting. Once they started to get brown and crisp on the edges, they were ready. At this point, the smell was heavenly!

After the roasted veggies cooled a bit, I put them in the Vitamix with a bit of tomato paste and blended for about 30 seconds. I didn’t need to add honey or any additional salt.

The flavor of the veggies was really intense just from the roasting. We used some of it for the Cauliflower Crusted Pizza. We topped the pizza with fresh basil, artichoke hearts, mushrooms, green olives, cherry tomatoes, salami and goat cheese.

Sorry there’s no picture of the final pizza! Our photographer left and our hands were too busy to take pictures. This is a shame because it really was a beautiful, photo-worthy pizza with all those good toppings going on.

The flavor of the sauce was very rich, filled with a sweet, spicy complexity. It also came out with a nice, thick consistency, which made it easy to spread on the pizza crust.

Besides pizza, you can also use this pizza sauce recipe for pasta and soups… maybe just add a little red wine to thin it out. It will last for a week in the refrigerator or you can freeze for later use.
